Chef prepares a full nonalcoholic pairing for those who choose to have another beverage option. This pairing is truly special because Chef is over five years sober and takes deep pride into crafting each beverage himself.
BEHIND THE NAME:
Konro is a Japanese grill that Chef's signature A5 "drunken" wagyu is tripled seared over rare binchotan charcoal all seasoned with a 12 year old "tare"; Japanese whisky barrel aged soy sauce from Kyoto, Japan. This dish is one of the reasons that earned him two Michelin stars from his first restaurant in Chicago, Il, as well as earning Best New Chef award from Food & Wine Magazine in 2015.
